In September 2026, Michelin-starred chef Sidney Schutte will open his new restaurant in Amsterdam: The Gym by Sidney Schutte. Guests can expect refined dishes in a vibrant setting with a contemporary approach to dining. The restaurant will be located in a former gymnasium next to The College Hotel Amsterdam, Autograph Collection, and will feature its own private entrance.

The internationally acclaimed chef will not only oversee The Gym itself, but will also take charge of the culinary direction of The College Hotel. From breakfast to lobby snacks, Schutte’s signature style will soon be reflected throughout the hotel.

Sidney Schutte: “A long-cherished dream is finally coming true. With The Gym, I am opening the restaurant I have always envisioned: a place where guests can enjoy high-level dining without being tied to a lengthy tasting menu. Informal and lively, with a strong focus on flavor. This will be reflected on the plate, in the glass, and in the overall atmosphere of the restaurant. I am also very much looking forward to collaborating with Atilay Uslu and Corendon Hotels on the culinary vision for The College Hotel.”

Pure, Accessible and Exceptionally Flavorful

After twelve years at Restaurant Spectrum, awarded with two Michelin stars, Schutte is now active in several restaurants across the Netherlands, Mexico, and Malaysia — the latter two also recognized with Michelin stars.

The chef’s signature style is clearly recognizable in his dishes: pure cooking, accessible, and exceptionally flavorful. The predominantly à la carte menu will reflect his Zeeland roots, with seafood, shellfish, vegetables, and seasonal ingredients taking center stage. The award-winning terrace between the hotel and restaurant will also become the stage for the culinary creations of Schutte and his team.

Talent and Craftsmanship

The restaurant is currently undergoing a complete renovation in collaboration with creative studio D/Dock. Both the hotel and Schutte will continue working together with the ROC of Amsterdam in training young hospitality talent. This ensures that craftsmanship remains an essential part of a location that was once a school itself.
